ALMOND COOKIES

A delicious buttery flavor, crispy and chewy cookies with a hint of almond. These are perfect to serve with a cup of tea.


INGREDIENTS

Makes about 30 cookies


3/4 cup unsalted butter, softened to room temperature

1 cup brown sugar

1 large eggs

1 teaspoons vanilla extract

1 1/8 cups all purpose flour

1/2 teaspoon baking power

Pinch of salt (0.7 g)

1/2 cup finely chopped almonds




INSTRUCTIONS

Pre-heat the oven to 180 Degrees. Line a baking tray with parchment paper. Whisk butter and sugar till light and fluffy.


Add egg and vanilla extract and mix until combined. Next add flour, salt and baking powder and mix well.


Fold in the almonds. Scoop out 1 tbsp. dough and make it into a ball or use a cookie scoop.


Gently press the ball with your palms. Arrange the cookies on the baking sheet. Bake for 15 minutes until the edges are browned.


Transfer the cookies on a wire rack and let them cool completely. Store in an airtight container for a week.
