ALMOND COOKIES BRITTLES

A simple to prepare flat cookies with a texture resembling brittle candy.

INGREDIENTS


4 Tablespoons unsalted butter

1/2 cup light brown sugar firmly packed

1/4 cup granulated sugar

1/4 cup light corn syrup

1 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup all-purpose flour

2/3 cup finely chopped almonds

INSTRUCTIONS


On the stove, melt the butter in a medium pot. Add the milk, salt, sugar, and almond flour once the butter has melted. Cook and stir the ingredients until the sugar has melted and everything is well blended.


Add vanilla essence after taking the pan off the heat. Give the dough five to ten minutes to settle and thicken.


Preheat oven to 180°C and line a baking tray with parchment paper.


Drop mixture by teaspoonfuls onto the prepared baking sheets, spacing them apart sufficiently.

Bake for 10 minutes until golden brown around the edges.


The cores and edges will bubble and sizzle. Before moving the cookies to a rack to finish cooling, let them cool for five minutes on the baking sheets. As cookies cool, they get drier and crisper.
