AVOCADO LOAF CAKE

This delightful avocado bread is ideal for breakfast or a snack. It strikes a perfect balance of sweetness without being overly sugary, and the avocado lends moisture and a beautiful green hue.


INGREDIENTS


3 cups all purpose flour

½ teaspoon kosher salt

2 teaspoons baking powder

2 teaspoons baking soda

1 ½ avocados, remove skin

2 cups sugar

3 eggs, room temperature

¾ cup milk

¼ cup yogurt

½ cup coconut oil or any vegetable oil

1 teaspoon lime juice


INSTRUCTIONS


Preheat oven to 180 degrees C and grease a loaf pan with parchment paper. Set aside. In a large bowl, whisk together flour, salt, baking powder, and baking soda.


In a blender, blend avocados, sugar, eggs, milk, oil, yogurt, and lime juice. Blend until mixture is smooth. Pour into dry ingredients and whisk until incorporated.



Pour into greased loaf pan and bake for 1 hour and 15 minutes. Let cool for 15 minutes before slicing. Enjoy !
