AVOCADO-WALNUT TEA CAKE

This cake combines the richness of avocados, the crunch of walnuts. All the healthy ingredients, that come together in one delicious and beautiful cake perfect for tea time.


INGREDIENTS


1 cup mashed Avocados (from 2 ripe Avocados)

2 cup cake flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon salt

2 eggs

1 cup sugar

1/2 cup canola oil

3 tablespoon lemon juice

zest of 1 lemon

1/2 cup chopped walnuts


INSTRUCTIONS


Preheat oven to 350 degrees and prepare a cake tin with parchment paper. Sift the flour, salt, baking powder, and baking soda in a large bowl. Set aside.


Mash the avocados and set aside. Whisk sugar, eggs, oil, lemon juice, lemon zest, and mashed avocado until combined in a bowl.


Pour the avocado mixture into the dry ingredients, and mix until combined.


Stir in the walnuts.

Pour the batter into the pans, smoothing down the top. I sprinkled some flax seeds.


Bake at 180 degrees C for 50 min to 1 hour. Allow to cool on a wire rack completely before slicing. Serve and enjoy !
