A simple dinner recipe with tender chicken cooked with veggies and layered with lasagna and a cheesy cream sauce.
INGREDIENTS
Chicken mix
1 Carrot (chopped)
1 - 2 Onions (chopped)
3 to 4 celery Stalks (chopped)
3 Tbsp Olive Oil
1 and 1/2 Tbsp Garlic (minced)
7 Tomatoes (pureed as is )
a pinch of salt
Sugar
3 Tbsp Red chilli powder
1/2 tsp Chilli Flakes
1/2 tsp Black Pepper Powder
1 cup Water
1/2 cup Corn (cooked)
1/2 cup Green Peas (cooked)
400 gms Chicken Mince
1/2 tsp Black Pepper Powder
2/8 tsp Chilli Flakes
2 tbsp Parmesan Cheese (grated)
1 tsp Dried Oregano
Lasagna Sheets
Water
3 tsp Salt
10 Lasagna Sheets
Cheese mix
200 gms Cottage Cheese / Paneer (you can use ricotta cheese as well)
6 Tbsp Mozzarella (grated)
1/2 tsp Garlic Powder
2/8 tsp Black Pepper Powder
1/2 tsp dried Oregano
Topping Cheese mix (this is the first layer)
3 Tbsp Mozzarella (grated)
3 Tbsp Parmesan Cheese (grated)
INSTRUCTIONS
Grind the carrot, celery and onion and set aside.
In a mixing bowl, combine the cheese mix ingredients and set aside as well.
In another bowl, combine the topping cheese mix as well and set aside.
In a medium saucepan, heat the oil and saute garlic over medium low heat. Next add the tomato pureed and cook for a minute.
Reduce heat to low and add the carrot, celery and onion grinded mixture. Add the salt, sugar , 3 tbsp red chilli powder , 1/2 tsp chilli flakes, 1/2 tsp pepper powder and cook covered on low flame till mixture is well combined and semi-dry.
Next add water and mix well . Next add the cooked corn, green peas and combine well.
Add the chicken and cook covered. Now add the 1/2 tsp pepper powder, 2/8 tsp chilli flakes, Parmesan cheese , 1/2 tsp dried oregano and combine. Cook until set.
To cook the lasagne sheet, take a large pan with water and add salt and a little bit of oil to it. Add the lasagne sheets once the water has started boiling. Cook for only a minute till sheets are soft and immediately transfer to cold water.
Assembly :
Preheat oven to 180 degree C.
In a 9x13 baking pan, first layer chicken mix in pan, followed by one layer lasagne sheet, then again the chicken sauce.
Next add cheese mix. Again layer with lasagne sheets, chicken mixture and cheese mix.
Follow this order till pan is almost full, and finally layer again with lasagne sheet , chicken mix and top with the topping cheese mix.
Bake for 30 minutes and let it rest for 15 minutes before serving.
Server hot.
