Transfer the sliced potatoes into a bowl of ice cold water and rest for 30 minutes.

TIP - Washing the potato slices in water will remove the excess starch on the surface.

Next step is to drain the water and pat dry the slices over a clean kitchen towel / paper napkins.

In case you are baking , follow the steps below:

Preheat oven to 230 C. Line baking tray with parchment paper.

In a pot of boiling water cook the potato slices for 3-5 minute. Drain well and toss with the olive oil, salt, and pepper. You can also add other spices here as well.

Place the slices onto the prepared baking sheet in one layer with enough space in between them. Bake for about 8 to 10 minutes until crisp and golden brown on both sides. Gently remove the chips and place on a cooling rack. allow them to cool for a few minutes.

Tip : Baking time will depend on you oven/microwave. Mine took around 8 minutes per side.

In case you are deep frying, follow the steps below:

Take the sliced potato one by one and deep fry. Deep fry the sliced potatoes in hot oil.

Stir occasionally and fry on both the sides. Once the potato slices turns brown and golden spots start to appear over the edges ,they are done.

For salt and pepper flavour, immediately sprinkle some salt and pepper over chips and mix gently. Be sure to taste the if they need additional salt.

Add salt and red chilli powder to the chips and toss it up for a chilli version.

For vinegar flavored, soak the slices that you took out of the cold water in vinegar for about 1 hour and then pat them dry. You can then bake or fry the slices. Once done, sprinkle salt once you taste them.
