Extra crispy baked and perfectly seasoned French fries with very crispy edges and soft centers - no guilt !
INGREDIENTS
3 medium potatoes
1-2 Tablespoons olive oil
Seasoning Mix
2 Tablespoons salt
1 teaspoon chili powder
1 teaspoon dried oregano powder
1/8 teaspoon cumin powder
1/8 teaspoon black pepper
INSTRUCTIONS
Wash and peel the potatoes. Now cut the potatoes into thin slices of required length and width to look like french fries.
Wash the potato slices once or twice. Add the fries to a bowl filled with cold water. Allow them to soak for at least 30 minutes to 1 hour and place them in the fridge.
After the fries have soaked, drain, rinse and dry them very well on paper towel. Blot the tops with additional paper towels to absorb any excess moisture.
Preheat oven to 210 degrees C. Line a baking tray with parchment paper. Take a dry bowl and add 1-2 tablespoons of oil and half of the seasoning ingredients and toss the potato slices in this to mix them well and set aside.
Evenly line the baking tray with the seasoned fries in a single layer. Do not overlap or the fries will not cook properly.
Bake for about 30 minutes, flipping with a spatula once or twice after 10 minutes of baking.
Increase heat to 220 degrees C and continue baking for about 25 minutes or until the edges look a little burnt!
Sprinkle the fries with more seasoning mix if required. Serve them immediately.
Tip : You can also fry them in hot oil. Fry the slices once till the potato is cooked and remove them from the oil. Do this for the entire batch and keep aside.
Again re-fry them on high heat till they are brown for extra crispiness and serve !
