BANANA WALNUT CAKE

Perfect for work week coffee breaks ! This is a ridiculously easy ultra moist cake loaded with flavor and topped with walnuts adding a nutty bite that complement this cake so well.

INGREDIENTS


3 large ripe bananas mashed

3 cups all-purpose flour / maida

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

½ teaspoon cinnamon powder

¾ cup unsalted butter , softened at room temperature

1 cup sugar

⅓ cup light brown sugar

3 eggs, at room temperature

2 teaspoon vanilla extract

1 ½ cups milk room temperature

1/2 cup walnuts ,chopped

INSTRUCTIONS


Preheat the oven to 180 degrees C. Prepare he baking tray with parchment paper.


In a mixing bowl, whisk together flour, baking soda and baking powder, salt and cinnamon. Set aside.


With an electric mixer fitted with a paddle, cream the butter and sugars together until light and fluffy, about 4-5 minutes. Scrape the bowl.

Next add the eggs and vanilla and beat until combined. Scrape the bowl and add in the mashed banana.


On low speed, alternately mix in the dry ingredients and the milk. Mix until just combined making sure not to over-mix.


Pour batter into the prepared baking tray and decorate with chopped walnuts. Bake for 45 minutes or until a toothpick comes out clean.
