BANANA WALNUT MUFFIN

Rich moist easy banana muffin recipe with chunky walnuts and is super moist, buttery and delicious..


INGREDIENTS


1 1/2 cup all-purpose flour/ maida

2 to 3 ripe mashed bananas

1/3 cup melted unsalted butter

3/4 cup powdered sugar

1 large egg, beaten

1 teaspoon vanilla extract

1 Tbsp strong brewed coffee

1 Tbsp of water (optional)

1 teaspoon baking soda

Pinch of salt

1 cup chopped walnuts


INSTRUCTIONS


Preheat the oven at 180C, Grease muffin tray and set aside.


Mash the bananas in a large bowl very well.

Stir the melted butter into the bananas. Mix in the sugar, egg, coffee and vanilla extract.


Whisk together the flour, baking soda, and salt. Add dry ingredients into wet, add nuts.


Add the flour mixture to the banana mixture, a third at a time, stirring until it is well mixed. Do not over-mix. Finally add the chopped walnuts.


Fill muffin cups, and bake. Spoon the mixture into a prepared muffin tin.


Bake at 180°F for 20-25 minutes.


Test by inserting a skewer or other tester into the centre of a muffin. If it comes out clean, it's done.


Cool on a rack. Frost as desired.
