BLACK FOREST CAKE

This delicious cake is made with a moist chocolate cake brushed with cherry syrup, a simple whipped cream frosting, cherries and chocolate shavings.


INGREDIENTS

For the Cake

1 cup unsalted butter, at room temperature

1 and a 1/2 cup powdered sugar

2 eggs

2 egg yolks ( Checkout the recipe to make Meringue cookies with left over egg whites )

2 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1 tablespoon coffee by mixing 3/4 cup boiling water mixed with 2 teaspoons instant coffee powder

1 cup buttermilk


For the cake syrup :

1/4 cup water

1/4 cup sugar

1 tablespoon cherry syrup ( I used the syrup from the canned cherries or you can use apple juice as well )


For the Whipped Cream Frosting

1 1/2 cups heavy whipped cream, cold

1/3 cup powdered sugar.

1 1/2 tablespoons cherry syrup

Chocolate shavings


INSTRUCTIONS


Preheat oven to 180 degree C and prepare two cake tins with parchment paper.


Sift the flour, baking powder, baking soda, salt and cocoa powder. Set aside.


Beat together butter and sugar together until light and fluffy. Beat the eggs and yolks in one at a time, then add in the coffee.


Next whisk in the flour mixture that was set aside alternating with the buttermilk. Whisk lightly.


Divide batter evenly into the cake pans and bake for about 30 minutes or until a toothpick inserted in the center comes out clean. Cool the cakes completely.


For the cake syrup:

Add the water and sugar to a small pot and boil. for about a minute. Remove from heat and stir in the cherry syrup. Transfer to a bowl and allow to cool.


Prepare the whipped cream frosting by beating together cream, powdered sugar and cherry syrup in a bowl until soft peaks form.


Carefully shave the chocolate using a knife or vegetable peeler. and set aside. Half some of the cherries and set aside as well.


For the assembly, cover the first cake layer first with syrup and then with whipped cream Next press cherry halves all over the top. Place the next layer on top. Cover the cake with whipped cream then smooth the top and side.


Gingerly press shaved chocolate onto the side of the cake and on the top. Leave about an inch from the edge uncovered.


Place the remaining whole cherries on the top or the side as you wish. Enjoy !
