BLUEBERRY BANANA OATMEAL BLENDER MUFFINS

These easy-to-make healthy incredibly soft, moist blueberry muffins are full of oats and bananas.



INGREDIENTS


2 cups instant oats

4 very ripe small bananas

2 eggs

1/2 cup sour cream

¼ cup brown sugar

1 teaspoon vanilla extract

1½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 cup fresh blueberries




INSTRUCTIONS


Preheat oven to 180 degrees C. Prepare a muffin tin with either muffin liners or lightly grease.


Add all the ingredients (except for the blueberries) to a blender. Pulse until smooth and well combined.


Using a spatula, gently fold the blueberries into the blender. Then fill the muffin tins upto 3/4th full. Bake for 12 minutes, or until golden brown and a toothpick inserted to the center comes out clean.
