BLUEBERRY TWIST BUNS

Baked with fresh blueberries, these cinnamon dough roll are bursting with fresh blueberry flavor making these amazing twisted buns.



INGREDIENTS


Dough :

1 cup milk

1/4 cup unsalted butter

4 cup all-purpose flour

0.25 oz yeast

1 teaspoon salt

1/3 cup granulated sugar

1/4 cup water

1 egg


For the blueberry filling :

1 and 1/2 cups blueberry fresh or frozen

1 tablespoon lemon juice

1/4 cup granulated sugar

1 tablespoon cornstarch

1 tablespoon water


For the cinnamon filling :

2 tablespoons unsalted butter melted and set aside in a small bowl

1/4 cup granulated sugar

1/4 cup brown sugar

1 tablespoon cinnamon powder


For the topping :

1 egg

2 tablespoons water

1/4 cup sesame seeds


INSTRUCTIONS


For the dough, heat milk in saucepan and turn off as soon as it begins to boil. Remove this from the heat and add butter, mixing until melted. Let the mixture cool.


In mixing bowl, whisk together the flour, yeast and sugar. Add in the milk/butter mixture followed by the water, and egg. Mix this well using a hand mixer or a stand mixer using the dough hook and knead for 5-10 minutes. Leave the dough in the bowl and cover with plastic wrap. Let the dough rise for one hour in a warm place.


For the blueberry filling, wash the blueberries well and toss them in cornstarch to coat evenly. In a sauce pan, heat blueberries, sugar and lemon juice on low until they begin to soften and release juices. Turn up the heat until bubbling, cook until blueberries start to break down and can be mashed and it begins to thicken. This mixture will thicken more as it cools. Remove from heat and let cool.



For the cinnamon sugar mixture, in another bowl, mix together brown sugar, granulated sugar, and cinnamon, and set aside.


Prepare a baking tray with parchment paper and preheat oven to 180 degree C.


Now roll out your dough on a floured surface and spread the melted butter over the whole dough until all the edges are covered well. Next, sprinkle the cinnamon sugar mixture throughout. Lastly, spread the blueberry filling over the whole surface of the dough.


Fold the long side of the rectangular dough towards yourself, lengthwise, to the middle of the dough. Now take the other side closest to you and fold over all the way to the end of the rectangle to form a three layer dough. Carefully use a rolling pin to flatten this 3 layer dough a bit and spread it out.


Slice the dough into 1 inch strips. Take one strip and hold on either end to twist. and twist together into a knot and place on the baking sheet. Repeat with all the knots.


Cover with plastic wrap and let it rise for another 15-20 minutes.


Mix the egg and water together and brush over all. Sprinkle with sesame seeds and bake for 16 minutes. Remove and let them cool. Enjoy!
