BUTTERSCOTCH CAKE

Super moist and and a soft crumb brown sugar and sour cream cake layers filled with homemade butterscotch sauce and butterscotch buttercream !


INGREDIENTS


For the cake:

2 1/2 cups all-purpose flour / maida

2 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon cinnamon powder

1 cup unsalted butter, at room temperature

1 and 1/2 cups brown sugar

1/2 cup powdered sugar

2 teaspoons vanilla extract

3 eggs

1 cup sour cream or plain yogurt


For the frosting:

2 cups powdered sugar, sifted

1 and 1/2 cup unsalted butter, at room temperature

1/4 teaspoon sea salt

2 teaspoons vanilla extract

1/3 cups butterscotch sauce (homemade or store-bought)

INSTRUCTIONS


Preheat the oven to 180°C. Prepare two 8 inch cake tins with parchment paper.


Whisk flour, baking powder, salt, and cinnamon. Set this aside.


In a mixing bowl, beat butter on high speed until smooth and creamy and add sugar. Beat this until light and fluffy.


Next add vanilla essence followed by eggs one by one and beat this until combined.

Add the flour mixture in three additions alternating with the sour cream mixing this on low speed until combined.


Pour the batter into the prepared pans and bake for 35 minutes or until golden brown and a toothpick in the center of the cake comes out clean.


Let cake cool completely and place in fridge before frosting.


For the frosting, mix together the sugar and butter with a hand mixer. Next add the salt, vanilla, and butterscotch sauce and beat until thoroughly combined.


Place one cake layer on a cake turntable or cake stand and spread about 1/3 cup of butterscotch sauce all over cake layer. Place the second cake layer onto the frosting so that the top of the cake is nice and flat. Now crumb coat the assembled cake by spreading a thin layer of frosting evenly all over the cake. Refrigerate for 30 minutes until the frosting layer is firm. Smooth on the remaining frosting and decorate as desired with the remaining butterscotch sauce.
