CHOCOLATE ALMOND BABKA BUNS

Soft fluffy chocolate babka buns that are simply delicious !


INGREDIENTS


1 and 1/4 cup maida or all-purpose flour

1/2 tablespoon instant yeast

1/4 cup powdered sugar

1/4 cup warm water

1 egg

1/4 cup unsalted butter, at room temperature, cut into small cubes

1/8 teaspoon salt


Filling

1/4 cup unsalted butter , melted

1/4 cup powdered sugar / brown sugar

1/4 cup unsweetened cocoa powder

1/2 cup dark chocolate

1/4 cup almonds coarsely chopped (optional)


Sugar Syrup:

1/2 cup water

1/3 cup (70 g) granulated sugar


INSTRUCTIONS


In a mixing bowl, take flour, powdered sugar, salt and yeast and mix until combined. Add eggs, warm water and mix using a hand or stand mixer. Once dough comes together, add the butter cubes and mix until incorporated and until the dough pulls away from the sides of the bowl.


Place dough in a bowl brushed with oil and cover with plastic wrap. Leave in warm place ( I placed this inside the microwave switched off ) for about 1½ to 2 hours or until doubled in size.


To make the filling, melt the butter in a saucepan. Add the sugar and stir until dissolved or almost completely dissolved. Remove from heat and add the chocolate. Let stand 1 minute, then stir until the chocolate is melted and smooth. Stir in the cocoa powder set aside.


Place dough on a lightly floured working surface and lightly knead it into a log. Cut into 8 equal pieces. Form each piece into a ball.


Take a ball and roll it into a rectangle. Spread the chocolate on top, leaving the edges empty. Roll it lengthwise. Cut it lengthwise leaving the top still together. Braid the 2 pieces of dough together, making sure the chocolate layer is on top. Shape the braided dough into a circle and tuck the ends well.

Place on a baking tin or tray with a baking sheet and sprinkle chopped almonds on top. Repeat with the rest of the balls. Rest the dough for 30 minutes in a warm place.


Preheat oven to 180C. Make the sugar syrup make the syrup but boiling sugar and water on stove using a saucepan and set aside to cool.


Once dough is risen, bake this bake for about 20 minutes.. Once the buns are out of the oven, brush the syrup over them to make them soft. Let this cool completely before serving.
