Delicious, moist, and incredibly sweet chocolate almond muffins.
INGREDIENTS
1 and 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 cup granulated white sugar
1 and 1/2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup almonds, divided
3/4 cup milk
1/2 teaspoon vanilla/almond extract
1/3 cup vegetable oil
1 egg, beaten
INSTRUCTIONS
Preheat the oven to 190°C. Grease a muffin tray, or line with baking cups.
In a mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, salt and 1/3 cup slice almonds.
In another bowl, whisk together the milk, vanilla/almond extract, oil, and beaten egg. Add the dry ingredients and stir just until combined. Do not over stir.
Fill the muffin cups 2/3 full. Sprinkle the top of each muffin with a pinch of sliced almonds. Pat down lightly so that they stick to the batter.
Bake for 18 minutes, or until a wooden pick inserted into the center comes out clean.
