CHOCOLATE CAKE WITH CREAM CHEESE FROSTING

This double layer moist chocolate cake is topped with a silky-smooth cream cheese frosting. A cake that is easy to make and perfect for a birthday cake or celebration cake !

INGREDIENTS


Chocolate Cake Recipe

1 and 1/2 cups granulated sugar

1 and 1/2 cups light brown sugar, packed

2 and 1/2 cups cake flour

1 and 3/4 cups unsweetened cocoa powder

3 teaspoons baking soda

1 and 1/2 teaspoons baking powder

1 and 1/4 teaspoons salt

3 eggs , at room temperature

2 egg yolks, at room temperature

1 and 3/4 cups whole milk

1/2 teaspoon lemon juice

3/4 cup vegetable oil

2 teaspoons vanilla extract

1 and 1/2 cups hot water

Cream Cheese Frosting

½ cup unsalted butter softened

8 oz cream cheese softened (226g)

1 teaspoon vanilla extract

¼ teaspoon salt

4 cups powdered sugar

INSTRUCTIONS


Preheat oven to 180°C. Prepare two 9-inch cake pans with parchment paper and set aside.


In a mixing bowl, combine sugars, flour, cocoa powder, baking soda, baking powder and salt and mix with a stand mixer or an hand mixer, on low until dry ingredients are thoroughly combined. In another bowl, combine the eggs, egg yolks, milk, lemon juice, oil and vanilla extract until completely combined.

Pour mixture into the dry ingredients and beat on low until just incorporated. Pour in hot water and continue mixing until completely combined. Divide batter evenly among prepared pans. Bake in preheated oven for 28 to 30 minutes, or until a toothpick inserted in the center of a cake comes out clean.

Cool cakes completely before frosting.

To prepare the frosting, combine butter and cream cheese in the bowl of a stand mixer or a hand mixer. Beat until creamy, well-combined, and lump-free. Add vanilla extract and salt and stir well to combine.

With mixer on low, gradually add powdered sugar until completely combined.
