CHOCOLATE CHIP BANANA BREAD

Wonderfully moist and loaded with ripe bananas, brown sugar for a caramel-like flavor and a dash of chocolate chips...a real treat



INGREDIENTS 1/2 cup unsalted butter 1 cup brown sugar 1/4 teaspoon salt

1 large egg 3-4 very ripe bananas, , mashed 1 teaspoon vanilla extract 2 cups flour/maida 1 teaspoon baking powder 1/2 teaspoon baking soda 1 cup chocolate chips

INSTRUCTIONS Preheat oven to 180 C

Line a loaf tin/pan with baking paper. The baking paper should hang over the sides of the loaf pan to help you easily remove the bread after baking. Grease with butter and leave it aside.


In a mixing bowl, cream butter and sugar together until smooth. Whisk in the egg then add the mashed bananas and vanilla essence. Mix and also by scraping down the sides of the bowl until well combined.

Add the flour, baking soda, baking powder, and salt. Mix until just combined.

Do not over mix. Preferably use the whisker or spatula to mix or the mixer at very low speed.

Fold in the chocolate chips. Pour the mixture into the loaf tin/pan. Bake for 65 minutes until a toothpick inserted in the centre of the loaf comes out clean.


Let cool for at least 30 minutes before cutting / serving.
