CHOCOLATE CREAM CHEESE CUPCAKES

Moist fudgy chocolate cupcakes topped with creamy cheesecake filling and with mini chocolate chips. A perfect comfort food !



INGREDIENTS


Chocolate chip cream cheese filling

112g cream cheese, softened and at room temperature

½ cup powdered sugar

1 egg

1/4 cup chocolate chips


Chocolate cupcake batter

1 and a 1/2 cups all-purpose flour

1/4 cup unsweetened cocoa powder

1 tsp baking soda

1 cups powdered sugar

1 egg

1/3 cup vegetable oil

1 cups water

1 tablespoon apple cider vinegar

1 tsp vanilla essence



INSTRUCTIONS


Preheat oven to 180 degree C and line 2 standard cupcake tins with cupcake liners.


Using a hand mixer or stand mixer beat the cream cheese until smooth and creamy. Next add in the sugar and egg and continue to mix until completely blended. Scrape down the sides of the bowl as necessary.


Fold in the chocolate chips with a spatula. Set this mixture to a side.


Now for the cupcake batter, using a hand mixer or stand mixer and in a mixing bow, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and sugar on low-medium speed.


Again on low speed, add in the egg, vegetable oil, water, apple cider vinegar, and vanilla essence. Mix until combined. Batter will be runny.


Using a cookie scoop, fill the cupcake liners no more than ½ full. Top these with 1 tablespoons of the cream cheese filling.


Bake for 20 minutes.


Remove from the oven and cool for 10 minutes in cupcake tin. Then transfer to wire rack and allow to cool completely.
