A sweet and light cookie that will melt in your mouth and dipped in melted chocolate..
INGREDIENTS
3 egg whites at room temperature
1/4 teaspoon salt
3/4 cup powdered sugar
1 teaspoon pure vanilla extract
1 cup dark chocolate chips or chopped chocolate
INSTRUCTIONS
Preheat oven to 100 degree C. Prepare a baking tray with good quality parchment paper.
In a mixing bowl, take the salt and egg whites after carefully separating them from egg yolks and begin mixing on low and gradually increase the speed to high.
Once the egg whites have frothed up you can begin sprinkling in the sugar. Add the sugar in gradually. Next add the vanilla extract.
Continue to beat on high speed, till the mixture is a thick creamy texture and can hold a nice peak. Transfer this mixture to a piping bag fitted with a large star attachment or with the tip snipped off.
Pipe the meringues batter onto the baking tray allowing at least an inch of space between each.
Bake for about 50 minutes and let them cool completely. Once cooled , you can lift the cookies off the baking sheet and they will feel very light and dry.
Meanwhile, melt the chocolate chips or chopped chocolate over a double boiler on the stove over low heat. Once the chocolate is fully melted, carefully dip each meringue into the chocolate to cover half of the cookie. Transfer the cookie back onto the parchment lined baking sheet and let the chocolate set. The chocolate will set even faster if you transfer the chocolate cookie dipped baking sheets into the refrigerator.
Once the chocolate has set, serve immediately.
