CHOCOLATE HAZELNUT ENERGY BALLS

These no-bake energy balls offer a delightful and nutritious snack! Combining the goodness of nutty hazelnuts with decadent chocolate, they are crafted using wholesome ingredients.



INGREDIENTS


1 and 1/2 cups hazelnuts

175g or 10 Medjool dates, soaked/drained

2 and 1/2 tablespoon cacao or cocoa powder

1/2 teaspoon vanilla extract

2 tablespoon water

1 cup chocolate chips



INSTRUCTIONS


Preheat oven to 160ºC. Lay out the hazelnuts on a baking sheet and bake them for 8-10 minutes. Allow them to cool. If these are skinned, do go ahead and rub them to remove the skin.


Add toasted hazelnuts, dates, cocoa powder and vanilla extract to a food processor. Process this until the mixture breaks down. Add water as needed, to get mixture sticky. Little tiny bits of hazelnuts can remain, but mixture should hold together when pressed.


Remove dough and use a heaping rounded tablespoon to roll into balls. You can also press into a lined 8×8 pan if you’d like to make bars.


Melt chocolate chips in a double boiler . Dip these balls /bars to coat them well and set aside to harden.
