CHOCOLATE HAZELNUT MUFFINS

Gooey chocolate inside a fluffy chocolate muffin topped with crunchy hazelnuts.


INGREDIENTS


2 cups all-purpose flour

3/4 cups chopped hazelnuts

1/4 cup unsweetened cocoa powder

1 tsp instant coffee powder

1/2 cup brown sugar

2 tsps baking powder

2/3 cups milk

2/3 cups vegetable oil

1/2 cup Nutella spread

2 eggs


INSTRUCTIONS


Preheat oven to 200°C. Line a muffin pan with muffin paper or with butter.


In a mixing bowl, mix together the flours, ground hazelnuts, cocoa powder, brown sugar, baking powder in a mixing bowl.


Whisk milk, oil, egg and Nutella together until smooth. Pour this mixture into dry ingredients and mix together quickly using a wooden spoon or a hand mixer on low speed, until just combined.


Spoon 2 tablespoon of the mixture into the base of each muffin paper case and decorate with hazelnut on the top . Bake for about 15 minutes or until cooked through. Cool for 5 minutes before transferring to a wire rack to cool completely.
