Soft Cinnamon-y rolls that are fluffy, satisfying and topped with a perfect icing that complements the cinnamon flavour.
INGREDIENTS
2 and 3/4 cups maida / all-purpose flour
1/4 cup powdered sugar
1 teaspoon salt
2 and 1/4 teaspoons instant yeast
1/2 cup milk
1/4 cup water
3 tablespoon unsalted butter
1 egg
Filling
Some unsalted butter, softened to room temperature
1 Tablespoon cinnamon powdered
1/4 cup powdered sugar (you can also use brown sugar)
Icing
1/2 cup powdered sugar
1/4 teaspoon pure vanilla extract
2 Tablespoons fresh cream or milk
INSTRUCTIONS
Whisk together flour, sugar, salt, and yeast together in a mixing bowl. Set aside.
Combine the milk, water, and butter together in a glass bowl. Microwave until the butter has melted. Mixture will be hot but not boiling.
Pour this mixture into the mixing bowl of dry ingredients and beat using a hand mixer fitted with dough hook. Now add the egg, and beat on low speed until it forms a soft dough that pulls away from sides of the bowl.
On a floured surface or mat , knead the dough for 2 minutes. Place this in lightly greased bowl and cover loosely. Let this rest for about 10 minutes.
Prepare a baking dish or tray and set aside.
Now roll the dough out in a rectangle on floured surface. Spread some softened butter and then the cinnamon and followed by sugar powder. Roll up the dough tightly on the longer side. Using a clean thread or sharp knife, cut into even sized rolls. Arrange these in the baking dish or tray.
Cover the tray with rolls tightly with plastic wrap and allow to rise for about 2 hours in a warm place.
Tip : I heated the microwave and then kept the tray inside the microwave switched off.
Preheat oven to 190 degree C. Make the icing by mixing all ingredients together .
Once the rolls have doubled in size, bake for 20 minutes. Spread the icing over the warm rolls. Enjoy it warm !
