Buttery, airy, and crispy cookies made with toasted coconut and covered in luxurious chocolate. These cookies are simply impossible to resist!
INGREDIENTS
200g unsalted butter, softened at room temperature
75g caster sugar
75g light brown sugar
1 teaspoon vanilla extract
1 egg
275g all-purpose flour
A pinch of salt
100g coconut, desiccated , toasted and cooled
100g milk chocolate, grated
25g coconut for sprinkling
INSTRUCTIONS
Heat the oven to 190C degrees. Prepare a baking tray/sheet with parchment paper.
In a mixing bowl, whisk butter using an electric whisk or in a stand mixer until soft. Beat in both sugars and the vanilla extract until light and fluffy. Now beat in the egg until combined. Sift in the flour and a pinch of salt and stir to combine. Fold in 100g of the toasted coconut.
Roll the dough into approx 20 balls and arrange them onto the prepared baking sheet/tray well spaced apart. Flatten each ball slightly on the tray using the palm of your hand.
Bake for approx 12 minutes until golden brown. Let them cool completely.
Now, melt the chocolate in the microwave until it is melted completely. Dip the cookies and lay them on a sheet of baking parchment. Sprinkle with the remaining toasted coconut. Leave to set.
