COFFEE LOAF CAKE

The aromatic flavour of freshly brewed coffee is infused into every bite of this easy bake loaf cake creating a rich and satisfying taste. This cake be made within minutes and is perfect for breakfast or a cup of hot coffee.

INGREDIENTS


1 and 3/4 cups all-purpose flour / maida

1/2 tablespoon unsweetened cocoa powder

2 teaspoons baking powder

1/4 teaspoon salt

3 tablespoons instant coffee granules

3 tablespoons hot water

1 cup (240 ml) whole milk

1/2 cup unsalted butter, softened to room temperature

1 and 1/2 cups granulated sugar

2 eggs. at room temperature

1 and 1/2 teaspoons pure vanilla extract

INSTRUCTIONS


Preheat oven to 160°C. Grease a loaf pan with parchment paper. In a small bowl, dissolve the coffee granules in 3 tablespoons hot water and mix it with the whole milk. Set this aside.


In a mixing bowl, whisk together flour, cocoa powder, baking powder, and salt.


Using a stand-mixer or hand-mixer, whisk butter and sugar until fluffy. Next add in the eggs and vanilla extract and beat until combined.


Now add in the flour mixture and then the milk mixture until fully combined. Do not overbeat the mixture.

Scrape down the sides and bottom of the bowl.


Pour the batter into prepared pan and bake for 60 minutes or until a skewer inserted into the center of the cake comes out clean. Remove from oven and allow to cool completely on a wire rack. Cake is best served at room temperature.


Store cake in an airtight container.
