COFFEE SPONGE CAKE

Indulge in a sumptuous coffee sponge cake that's rich, moist, and bursting with flavor. It's easy to whip up and perfect for any gathering or special occasion.

INGREDIENTS


1/3 cup milk

1 tablespoon coffee powder

2 eggs , at room temperature

3/4 cup sugar

3 tablespoon oil

1 teaspoon vanilla essence

1 cup cake flour

1 teaspoon baking powder


INSTRUCTIONS


Preheat oven to 160°C. Grease a cake pan with parchment paper. On the stove, in a saucepan, boil milk with coffee powder. Set this aside to cool.


Using a stand-mixer or hand-mixer, whisk the eggs well and add in sugar. Next add in the oil and combine well until the mixture turn pale. Add in the vanilla essence.


Now add in the flour and baking powder and then the coffee milk mixture until fully combined. Do not overbeat the mixture.


Scrape down the sides and bottom of the bowl.

Pour the batter into prepared pan and bake for 35 minutes or until a skewer inserted into the center of the cake comes out clean. Remove from oven and allow to cool completely on a wire rack. Cake is best served at room temperature.


Store cake in an airtight container.
