COFFEE WALNUT CAKE WITH COFFEE BUTTERCREAM

A delicious cake that is simple to make and packed full of flavour.



INGREDIENTS


3/4 cup walnuts (chopped)

1 1/2 cups flour / maida

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup butter (softened to room temperature)

1 cup sugar (powdered)

2 large eggs

1/2 teaspoon vanilla extract

1/3 cup milk

3 tablespoons strong espresso or any strong coffee powder


INSTRUCTIONS


Prepare the cake tin. Combine the flour, baking powder, and salt in a bowl and set aside.


In a mixing bowl with a hand mixer mixer, beat the softened butter with the powdered sugar until light and fluffy. Beat in the eggs, one at a time, beating after each addition. Add the vanilla.


In a cup, combine the milk with the 3 tablespoons of coffee powder. ( you can reduce this in case you do not want a strong coffee flavour )


With the mixer on low speed or spatula , blend in the flour mixture into the creamed mixture, alternating with the milk and espresso mixture. Blend well.


Fold in the finely chopped walnuts ( I put some additional ones on top of the batter as well)


Spread the batter in the prepared baking pan.


Preheat the oven to 180 C. Bake for approximately 35 minutes, or until a toothpick should come out clean when inserted into the center of the cake.


Cool in the pan on a rack for 10 minutes. Carefully remove the cake from the pan and cool completely.












COFFEE BUTTERCREAM FROSTING:


INGREDIENTS


1 Cup Butter softened at room temperature

2 Cups Powdered Sugar

1 Tablespoon Instant coffee

2 tablespoon Hot water (more or less depending on how strong you want the coffee flavor)

2 tablespoon Heavy Cream / Double Cream

Roasted walnuts


INSTRUCTIONS


In the bowl of an electric mixer fitted with a paddle attachment, or large bowl with a hand held mixer beat the butter for 5 full minutes, until light and fluffy.


Sieve the powdered sugar and add half to butter. Beat for another couple of minutes then add the remaining powdered sugar and mix.

While powdered sugar is mixing into butter, in a small bowl add instant coffee and hot water. Add the coffee mixture to frosting with heavy cream and beat for another 3 minutes.


Spread or pipe frosting. Decorate with roasted walnuts.
