COIN or BEAN BISCUITS

A nostalgic snack that is crispy, crunchy and tasty. A delightful accompaniment with a tea or a coffee.



INGREDIENTS


2 eggs

5 tablespoons powdered sugar

1 teaspoon vanilla essence

2 tablespoon melted unsalted butter

Pinch of salt

3/4 cup all-purpose flour / maida

1/2 teaspoon baking powder

1/8 teaspoon turmeric powder


INSTRUCTIONS


Preheat oven to 180 degree C. Prepare a baking tray with parchment paper.


In a mixing bowl, beat 2 eggs. Next add melted butter, vanilla essence, salt and powdered sugar. Whisk well using a hand-held mixer


Sieve flour, turmeric powder and baking powder into this mixture and mix gently to make a dough.


Pour the batter into a piping tool and drop the dough into small rounds onto the baking tray.


Bake for 10 to 15 minutes and until the edges of biscuit turns golden. Remove the biscuits and allow for it to cool down and it will turn crispy.
