OREO BIRTHDAY CAKE

A rich, moist Oreo cake filled covered in a light Oreo whipped cream frosting making it a great birthday cake and an Oreo lover’s dream.



INGREDIENTS


2 cups all-purpose flour

1 cup powdered sugar

1/4 teaspoon baking soda

1 teaspoon baking powder

1/4 teaspoon kosher salt

3/4 cup unsalted butter, room temp

3 egg whites (refer notes for recipes with the egg yolks)

1 teaspoon vanilla extract

1/2 cup sour cream

1/2 cup whole milk, room temp

1 cup chopped Oreos


Oreo buttercream frosting :

1 and a 1/3 cup unsalted butter, at room temp

5 cups confectioners' sugar

1/3 cup heavy cream

pinch salt

1-2 tbsp milk (optional, depending on consistency)

1 cup crushed Oreos


Chocolate drip :

1 cup semi dark chocolate chips

1/2 cup heavy whipping cream


INSTRUCTIONS


Preheat your oven to 180 degree C and prepare two round cake pans with parchment paper greasing the sides with baking spray.


In a bowl, whisk together flour, sugar, baking powder, and salt and set aside.


In a mixing bowl using a hand-held mixer or stand mixer, whisk butter. Add the dry ingredients and whisk on low speed.


Take the wet ingredients in another bowl and whisk well. Add this to the butter mixture.

Now, fold in the crushed Oreos at the very end and mix until just combined


Divide batter evenly into prepared baking pans and transfer to preheated oven and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.


Allow cakes to cool in pan for 15 minutes then carefully invert onto cooling rack and allow to completely cool before assembling and decorating.


For the buttercream , beat the butter until light and fluffy. Add the confectioners' sugar, milk and cream and mix. Mix in the crushed Oreos into this as well. Move this to a piping bag.


For the ganache, melt chocolate and cream together on low heat. Whisk together and set aside. You might need to add more or less cream to achieve the desired consistency.


For the Assembly , add the Oreo buttercream in between each layer with just enough . Also, coat outside with buttercream and smooth. Pour the ganache on top and allow to drip. Smooth top with an offset spatula. Pipe some Oreo buttercream dollops on top and decorate as desired with more Oreos.
