Light and delicious soft cream cheese cookies that will melt in your mouth and are super simple to make.
INGREDIENTS
3 1/8 cup maida / all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup softened unsalted butter
112g block cream cheese
1 cup powdered sugar
1 egg
2 teaspoons vanilla extract
INSTRUCTIONS
Preheat oven to 190 degree Celsius and line a baking tray with parchment paper. Whisk flour, baking powder and salt together and set aside.
In a medium bowl, beat together butter and cream cheese together using a hand-held or stand mixer till it is smooth and creamy. Add powdered sugar and beat well. Add egg and vanilla extract and beat until combined. Ensure to scrape down the sides of the bowl until well combined . Ensure to not over mix.
Slowly add the flour mixture into this and mix till soft and creamy. Cover bowl and chill for at least an hour to two hours.
Take the bowl out of the fridge and scoop out one tablespoon in size of dough. Dampen your clean hands and roll into a ball.
Place each ball about two inches apart on a parchment paper lined baking tray. Bake for approximately 10 minutes. The cookies are done when the edge is set and just starts to turn light brown in color.
Let them cool completely and if desired, sprinkle with powdered sugar once cooled.
