CREAM CHEESE PASTRIES

These ultra easy cream cheese pastries are delicate, pretty, and tasty making it an easy brunch or snack.

INGREDIENTS


2 puff pastry sheets - you can use the frozen or the homemade one

226 grams or 8 oz cream cheese, softened at room temperature

¼ cup granulated sugar

1 egg yolk

½ teaspoon vanilla extract

Chocolate chips for decoration, optional


Egg wash

1 egg, beaten

1 teaspoon water

INSTRUCTIONS


Preheat oven to 205°C. Prepare a baking tray with parchment paper.


Preparethe filling while the puff pastry sheets are thawing.


In a mixing bowl , whisk together the softened cream cheese and granulated sugar using a handheld mixer or stand mixer until the sugar is completely combined. Next add the egg yolk and vanilla extract and whisk until combined. Set aside.


Unroll a sheet of puff pastry on a lightly floured surface. Cut the dough using a knife in into a total of 12 perfect square pieces.


Brush the square piece of dough with a thin coat of water. This will help the dough to stick together.


Fold the dough square in half by bringing one corner to the opposite corner. Cut a slit a ½ inch from the edge on both sides. Bring one corner of the dough to the other side and press together so it stays put. Repeat with the opposite corner.


Follow the steps in the picture below.










Spoon a dollop of the cream cheese mixture into the center of the dough. Top with chocolate chips.


Repeat this steps with all the dough and place each piece on a parchment lined sheet pan.


Combine the egg (1 large) and water (1 tablespoon) for the egg wash together and whisk vigorously until well combined and very smooth. Brush the egg wash on the puff pastry and not the filling.


Bake for about 15 minutes until the puff pastry is puffed and golden.


Let cool completely. Enjoy !
