CRISPY FRENCH FRIES WITH HOMEMADE CHEESE SAUCE

Delicious fries made from real freshly-cut potatoes accompanied by a homemade creamy cheese dip.


INGREDIENTS

800g potato, peeled

1 teaspoon salt

20g corn starch

Vegetable oil , for frying


For the cheese sauce

20g unsalted butter

5g all-purpose flour / maida

1/4 teaspoon salt

1/4 teaspoon chilli powder

100ml milk

Black pepper

70g cheddar cheese

10g sugar



INSTRUCTIONS


To prepare the French fries, cut the peeled potatoes in long strips about 1 to 1.5cm thick , to create French fries.


Soak it in a bowl of cold water for 30 minutes . Drain it and wash them again a few times to remove the starch.


In a saucepan with boiling water, put in the salt and boil the potato slices for 3 to 5 minutes. Drain it and remove the moisture completely using paper towel.


Then coat it thoroughly with corn starch in a bowl. Remove excess is corn starch layer is too thick.


Fry it in hot preheated oil for around 6-8 minutes on low-high heat and take it out once it turns golden. Let them cool.


Make the cheese sauce, while waiting for the fries to cool down.



Put unsalted butter in a preheated pan, followed by the flour and stir well.


Add salt, sugar and chilli powder. Stir it thoroughly then pour in the milk followed by the pepper. Keep stirring to avoid sticking. When it starts to boil, add cheddar cheese and stir it well until it becomes thick. Set aside.



Fry the French fries again once cooled , for about 4 to 6 minutes until golden. Serve hot with the cheese sauce.
