This easy moist, cake- like bread flavoured with dried cherries giving it a burst of fruitiness and studded with almonds.
INGREDIENTS
2 cups all-purpose flour/ maida
1 cup powdered sugar
2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped dried cherries
3/4 cup milk
2 eggs
8 tablespoon unsalted butter, melted and cooled
1 teaspoon vanilla extract
1/2 cup almonds, chopped into small pieces
INSTRUCTIONS
Preheat oven to 180 degree C. Prepare a loaf pan with parchment paper.
In a mixing bowl, whisk together the flour, sugar, baking powder and salt. Add the cherries and toss to distribute evenly.
In another bowl, whisk together the milk, eggs, butter and vanilla extract. Add this mixture to the flour mixture and stir until combined. Be careful not to overmix.
Pour the batter into the prepared loaf pan and sprinkle generously with chopped almonds . Bake until the top of the loaf is golden brown and a toothpick inserted into the center comes out clean for about 60 minutes. Let the pan cool for 10 minutes and once cooled, turn the loaf out onto a rack and let it cool completely before serving.
