An easy to make, sweet , tangy and smooth lemon spread that makes a great filling for cakes and is a delicious spread on muffins, bread and on just about everything.
INGREDIENTS
MAKES ABOUT 1 CUP
3/4 cup pr 75g unsalted butter, cubed and cold
1 eggs
1 egg yolks
1/2 cup powdered sugar (sieved)
1/4 cup fresh lemon juice
1/2 tablespoon lemon zest
INSTRUCTIONS
Beat together the egg, egg yolk, sugar, lemon zest and juice in a saucepan. Place this on low-medium heat until the sugar has dissolved completely .
Add the butter pieces one at a time stirring until melted and well mixed.
Continue cooking for 4 minutes. Whisk constantly until mixture thickens and coats the back of a spoon.
Pour into sterilised jar and refrigerate until cold. Enjoy this with your treat !
