GARLIC BREADSTICKS

A quick irresistible side dish that is soft, garlic flavoured and buttery.

INGREDIENTS

Dough

2 1/3 cups all-purpose flour/ maida

2 1/4 teaspoon instant yeast

1 1/2 teaspoons sugar

3/4 teaspoon salt

1/4 teaspoon garlic powder (optional)

1/4 teaspoon dried basil leaves (optional)

2 Tablespoons olive oil

3/4 cup warm water

For topping

2 Tablespoons unsalted butter, melted

4 minced garlic cloves

1 teaspoon dried basil

1/2 teaspoon parsley

1/2 teaspoon red chilli flakes

1/2 teaspoon oregano

Shredded mozzarella cheese

INSTRUCTIONS

Combine 1 cup of flour, yeast, sugar, and salt in a large bowl. If required, add garlic powder and dried basil to this mixture as well.

Add olive oil and warm water and use a wooden spoon to stir well very well. Gradually add another 1 cup of flour and add any additional flour as needed (I did not need to use all the remaining 1/3 cup flour), stirring or using a hand held mixer with dough hook until the dough is beginning to pull away from the sides of the bowl.

Lightly dust your hands with flour and form your dough into a round ball and transfer to clean bowl coated with olive oil. Cover the bowl tightly with plastic wrap and place it in a warm place. Allow dough to rise until doubled in size for about 30 minutes to 1 hour.

Preheat oven to 220 degree C and prepare a baking tray with parchment paper.

Once the dough has risen, use your hands to gently deflate the dough and transfer to a lightly floured surface and knead until smooth. Using a rolling pin, roll the dough out into a 9×13 inch rectangle and move this onto the baking tray.

Combine the melted butter, garlic and seasoning together in a small bowl. Brush over shaped dough to cover it fully. Cover evenly with shredded cheese.

Bake for 15 minutes or until the edges are golden brown. Slice and serve.
