Super easy gingerbread cookies flavored with fresh ginger and spices perfect for the holiday season !
INGREDIENTS
4 ounce unsalted butter, cold
1 and 3/4 cup light brown sugar
1 egg
1/4 teaspoon salt
1/2 tablespoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground clove
2 cups all-purpose flour
INSTRUCTIONS
Preheat oven to 170 degree C and prepare two baking trays with parchment paper and set aside.
In a mixing bowl, beat cold butter and brown sugar using a stand mixer or hand mixer until well combined. Scrape down the sides and bottom of the bowl with a rubber spatula.
Next add the egg, salt, ginger, cinnamon and clove powder. to the bowl. Mix until all the ingredients are incorporated. Scrape down the bowl again.
With the mixer running on low speed, slowly add the flour into the bowl. Mix just until combined.
Knead this on a clean work surface and divide it in half. Using a rolling pin, roll out to about 1/4 inch thick. Cut out your cookies with a cookies cutter and place them on a parchment orlined baking tray.
Bake these for about 12 minutes until they are slightly crispy at the edges and soft in the center. Allow them to cool completely.
Frost them as desired and store cooled cookies in an airtight container at room temperature for up to 5 days.
