Brown sugar, cinnamon, ginger, cloves, and molasses combine to make chewy, thick cookies that are brimming with flavour. They are topped with the tastiest homemade frosting. ideal for the holiday cookie season!
INGREDIENTS
Cookies:
3 cups all-purpose flour
3/4 cup brown sugar
3/4 teaspoon baking soda
1 tablespoon ground cinnamon
1 tablespoon ground ginger/ginger powder
1/2 teaspoon ground cloves
1/2 teaspoon salt
12 tablespoons butter , room temperature
3/4 cup molasses (dark molasses)
2 tablespoons milk
Icing:
2 tablespoon butter , room temperature
2 cups powdered sugar
2 tablespoons milk
Food coloring, if desired
INSTRUCTIONS
In a large mixing bowl, whisk together flour, brown sugar, baking soda, cinnamon, ginger/ginger powder, cloves, and salt.
Next add the butter and blend this with a hand mixer until perfectly blended.
Gradually add the molasses and milk and mix until combined into a dough.
Divide the dough in half and wrap each in plastic wrap and refrigerate for atleast 2 hours or overnight.
Once ready, preheat the oven to 180 degrees C and line 2 baking trays with parchment paper.
Remove one dough sheet at a time from the fridge and roll out the dough until it’s about ½ inch thick. Cut the cookies into multiple shapes and place them on prepared baking sheets. Refrigerate these for 5 minutes.
Bake the cookies until set in the centers and the dough barely retains and imprint when touched very gently with fingertip, 8 to 11 minutes.
Remove the cookies to a wire rack and allow to cool to room temperature completely.
For the frosting, add butter, milk, and 1 cup of powdered sugar to a bowl. Mix until smooth. Add additional cup of powdered sugar and mix until smooth. next add in food coloring, if required. Add frosting to piping bag for decoration.
Decorate the cookies and allow to set. Enjoy!
