Gingerbread men cookies are a fun and easy , festive treats that the entire family will enjoy eating and making this holiday season ! The kids will love them too !
INGREDIENTS
3 cups all-purpose flour
3/4 cup brown sugar
3/4 teaspoon baking soda
1 tablespoon ground cinnamon
1 tablespoon ground ginger/ginger powder
1/2 teaspoon ground cloves
1/2 teaspoon salt
12 tablespoons butter , room temperature
3/4 cup molasses (dark molasses)
2 tablespoons milk
INSTRUCTIONS
In a large mixing bowl, whisk together flour, brown sugar, baking soda, cinnamon, ginger/ginger powder, cloves, and salt.
Next add the butter and blend this with a hand mixer until perfectly blended. Gradually add the molasses and milk and mix until combined into a dough.
Divide the dough in half and wrap each in plastic wrap and refrigerate for atleast 2 hours or overnight.
Once ready, preheat the oven to 180 degrees C and line 2 baking trays with parchment paper.
Remove one dough sheet at a time from the fridge and roll out the dough until it’s about ½ inch thick. Cut the cookies into gingerbread cookies and place them on prepared baking sheets. Poke eyes with a toothpick.
Refrigerate these for 5 minutes. Bake the cookies until set in the centers and the dough barely retains and imprint when touched very gently with fingertip, 8 to 11 minutes.
Remove the cookies to a wire rack and allow to cool to room temperature completely.
