HEALTHY BANANA BLUEBERRY MUFFINS

This simple, delicious Healthy Blueberry Banana Muffins recipe is usper easy to make and super flavorful. Naturally sweetened with ripe bananas and fresh blueberries, these muffins aer a great way to srate the day or curb you hunger !



INGREDIENTS


2 cups whole wheat flour or hlf all-purpose flour and whole wheat flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon cinnamon powder

1/4 teaspoon salt

1 cup mashed banana (about 2 large ripe bananas)

1/2 cup light brown sugar

1/4 cup honey

1/4 cup coconut oil

1 egg, at room temperature

1 teaspoon vanilla extract

2/3 cup milk, at room temperature

1 and 1/4 cups fresh or frozen blueberries

Some coarse sugar for sprinkling on top



INSTRUCTIONS


Preheat oven to 220°C. Prepare a muffin pan with butter , prachement paper or line with cupcake liners.


In a large mixing bowl, whisk the flour, baking powder, baking soda, cinnamon powder, and salt together. Set this aside.


In mixing bowl, mash the bananas with a fork. Next whisk in the brown sugar, honey, coconut oil, egg, vanilla, and milk until combined.



Pour the wet ingredients into the dry ingredients and whisk until everything is just combined. Fold in the blueberries. The batter will be semi-thick. Spoon the batter evenly into the muffin cups. Sprinkle some coarse sugar on the top.


Bake for 5 minutes at 220°C and then reduce heat to 177°C and continue baking for another 15 minutes or until a toothpick inserted in the center comes out clean.



Allow the muffins to cool for 5 minutes in the muffin pan, and then transfer to a wire rack to continue cooling. Enjoy !
