HOMEMADE BAKED NACHOS / TORTILLA CHIPS

Made from scratch with goodness of maize flour and oregano flavour... a perfect snack !


INGREDIENTS


3/4 cup maize flour

5 tbsp all purpose flour ( maida )

2 tbsp oil

1/4 tsp turmeric powder (in case you want a yellowish color. Else skip this)

1/4 tsp carom seeds/ajwain

1/2 dried oregano

1/4 tsp salt or to taste

Some plain flour and luke warm water for kneading


INSTRUCTIONS


In a large bowl combine all the ingredients and mix them well.

Start kneading into a semi soft dough with adequate amount of luke warm water and knead well.


Take a lemon-sized dough, and then roll it into a round shape using additional plain flour. This is similar to the what we do to make roti or chappati.

Prick the rolled dough all over with the help of a fork.


Next step is to dry them - you can either dry them overnight or lay them in an oven as a single layer on a baking sheet and heat them at 180 degrees C. for 5 minutes.


Now with the help of pizza cutter or a knife, cut the circle into 16 equal triangles.

Baking :

Spread the triangles out on a baking sheet in a single layer. Bake them for about 6 minutes in a preheated oven at 180 degrees C until chips are crisp and not too brown. Then use tongs to turn the wedges over.

Remove from the oven and let it cool. Sprinkle with more salt if required and or add spices if any.


Serve with your favourite salsas or dip.

Frying :

Heat the oil in a non stick pan, drop in slowly one by one few triangles at a time and deep fry the triangles on a slow to medium flame till crisp and golden brown. Drain on an absorbent paper and repeat the process with all the triangles, fry them in batches till they turn crisp and golden in color. Sprinkle with more salt if required and or add spices if any.


Serve with your favourite salsas or dip.
