1/3 cup chopped roasted peanuts

For the base:

1/4 cup unsalted butter , at room temperature

2 tablespoon brown sugar

1/2 teaspoon vanilla extract

1/8 teaspoon salt

1/8 teaspoon baking powder

1/2 cup all-purpose flour

For the Chocolate coating:

100g milk chocolate, chopped

1 teaspoon coconut oil

INSTRUCTIONS

Preheat your oven to 180 degrees C and line a baking pan with parchment paper.

Prepare the caramel sauce first and allow it to cool. Measure out 1/2 cup and and stir in chopped peanuts. Set this aside.

In a mixing bowl, whisk together butter, brown sugar, vanilla and salt until smooth and creamy. Next add sieved flour and baking powder and mix it through until combined. Press this dough into the baking pan and press it down evenly to form a flat layer.

Tip : You can use a piece of baking or waxed paper on top of the crust to help smooth it out or run the back of a spoon over the surface.

Bake this 15 minutes or until lightly golden. Transfer to a wire rack to cool.

Next pour the caramel peanut mixture over the base in an even layer, then place in the fridge to set until caramel is firm.

Slice the chilled slab into 10 small bars using a dry knife. If required, place the bars in the freezer for 5 minutes while you melt the chocolate.

For the chocolate coating, combine milk chocolate and coconut oil in a mixing bowl and heat it until completely melted and smooth. Dip each of the chilled bar in the melted chocolate, then place back onto a tray to set.

Serve chilled or at room temperature once the chocolate hardens completely.
