ITALIAN SPONGE CAKE

A fluffy and airy cake that is made with just three ingredients and does not have any butter, oil, baking powder or soda. This cake is best enjoyed plain with a cup of tea or coffee.



INGREDIENTS

Makes one cake in a 6 inch tin


3 eggs, at room temperature

1/3 cup + 2 tablespoons powdered sugar

a pinch of salt

1/2 teaspoon vanilla essence

3/4 cup + 3/4 tablespoon all-purpose flour



INSTRUCTIONS


Preheat the oven to 170 degrees C. Prepare a cake tin with parchment paper or with butter and flour.


In a mixing bowl, take the eggs, sugar, salt, and vanilla essence and using a stand mixer or hand held mixer, beat the eggs until very fluffy and pale yellow on very high speed ( this would take approx. 15 to 20 minutes ).


Beat this mixture till creamy and a small amount of batter falling back into the bowl does not melt immediately and is "sitting" on top.


Using a spatula or wooden spoon , fold in the flour gently.


Pour the batter into the prepared pan and leave it as is. Do not try and smooth the top or bang the pan on the counter.


Bake for 35 minutes or until a toothpick inserted into the center comes out clean.


Turn off the oven and leave the cake inside for 5 to 10 minutes so it can cool down slowly.


Once done, remove the sponge cake from the oven. Allow it to cool for a 10 minutes in the pan and then remove it from the pan onto a wire rack to cool completely.


Slice and enjoy !
