2 cups sugar

3/4 cup unsweetened cocoa powder

2 teaspoons baking powder

1 1/2 teaspoons baking soda

1 teaspoon salt

1 teaspoon instant coffee powder

1 cup milk

1/2 cup vegetable oil

2 eggs

2 teaspoons vanilla extract

1 cup boiling water

For the vanilla frosting :

2 cup unsalted butter, softened

4 cup powdered sugar

5 tablespoon heavy whipping cream

25 packs of KitKat Bars

Gems for decoration, optional

INSTRUCTIONS

Preheat oven to 180-degree C. Prepare one 9-inch cake pan with parchment paper.

In a mixing bowl, whisk flour, sugar, cocoa, baking powder, baking soda, salt, and coffee powder. Stir through flour mixture until combined well.

Add milk, oil, eggs, and vanilla extract to the dry mixture and mix together until well combined. Reduce speed and carefully add boiling water to the cake batter until well combined.

Pour the batter into the prepared cake tin and bake for 30-35 minutes, until a toothpick or cake tester inserted in the center of the chocolate cake comes out clean.

Remove from the oven and allow to cool for about 10 minutes, remove from the pan and cool completely.

Make the frosting using a standing mixer, beat all ingredients together until combined, smooth, and stiff with peaks.

Now to build the cake, remove the cakes from the cake pans and cut off the domes on the top of the cake to make the cake layers even and flat.

Scoop out about 1 cup of frosting onto the top of the cake and smooth the frosting evenly.

Unwrap the KitKat bars and place them around the outside of the cake until the entire sides is covered in KitKat bars, decorate the center of the cake with the remaining frosting and with the gems. For the final details, tie a ribbon around the cake.
