LACE COOKIES

Thin flat cookies with a toffee-like flavor and a brittle candy-like texture... Super easy to make and you would just not stop with one. Make it a treat as a cookie sandwich as well.


INGREDIENTS


2/3 cup white or brown sugar 3/4 cup almond flour

1/2 cup unsalted butter 1/4 teaspoon salt 1 Tablespoon milk + 1 tablespoon more (in case the flour gets crumbled) 1 teaspoon pure vanilla extract For ice cream sandwich you would need Nutella or melted chocolate


INSTRUCTIONS Melt butter in a medium saucepan on stove. Once melted, add the sugar, almond flour, salt, and milk. Cook and whisk until sugar has dissolved and ingredients are completely combined.

Remove from heat and whisk in vanilla extract. Mixture will be grainy and shiny.


Allow dough to sit and thicken for about 5-10 minutes.


Preheat oven to 180°C. Line baking tray with parchment paper.

Drop teaspoonfuls of mixture with enough distance apart apart onto prepared baking sheets. I used a piping bag to get the correct shape.


Bake for 10 minutes until golden brown around the edges.


The edges and centers will sizzle and bubbly. Allow cookies to cool for 5 full minutes on the baking sheets before transferring to a rack to cool completely. Cookies dry and crisp up as they cool.

Once cool, enjoy cookies or sandwich with Nutella or melted chocolate.


To sandwich, spread either Nutella or melted chocolate onto the bottom of one cooled cookie and sandwich with another.
