This sweet basil seed Lemon Cake impresses everyone with its texture. It is very soft and moist and literally melts in your mouth with each bite, leaving behind a basil flavor and a lemony zing taste. So outrageously delish!
INGREDIENTS
1/2 cup powdered sugar
1/2 cup unsalted butter, softened at room temperature
2 eggs
2 tablespoons yogurt
1 tablespoon freshly squeezed lemon juice
2 teaspoons lemon zest
3/4 cup)all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
2 tablespoons sweet basil seeds
INSTRUCTIONS
Preheat the oven to 160°C. Grease and line a loaf tin with butter and parchment paper.
Using an electric mixer, whisk together butter and sugar together until there is a light and fluffy mixture. Next add in the eggs one by one.
Next add in the yogurt, lemon juice, and lemon zest to the mixture.
Whisk the flour, salt, baking soda, and baking powder. Add this to the wet mixture and fold in the sweet basil seeds.
Pour the batter into the prepared tin and even out the top using a spatula. Do not bang the tin on a counter.
Pour into cake tin and bake for 45 minutes or until a skewer inserted in the centre comes out clean. Cool completely in the tin and serve ! Enjoy !
