LEMON BLUEBERRY LOAF CAKE

A light, lemony cake that is tender and full of fresh blueberries! This amazing loaf cake is topped with a a sweet and tangy layer of crumble and a lemon icing drizzle !

INGREDIENTS

Crumble

2 tablespoon unsalted butter

3 tablespoon granulated sugar

1/3 cup all-purpose flour

pinch of salt


Loaf

1 cup granulated sugar

2 tablespoon fresh lemon zest

1 1/2 cups all-purpose flour + 1 tablespoon

1 teaspoon baking powder

1/4 teaspoon salt

3/4 cup unsalted butter, at room temperature

1 teaspoon vanilla extract

3 eggs

2 tablespoon fresh lemon juice

1/4 cup milk

1 1/2 cups fresh blueberries


Lemon Icing

1/2 cup powdered sugar

3/4 tablespoon cream or milk

1/2 tablespoon fresh lemon juice

INSTRUCTIONS


To prepare the crumble first, mix together all of the ingredients listed , in a small bowl. You can do this with hands and crubmle the mixture. Place this in the refrigerator while the batter is being prepared.


To prepare the loaf cake, firstly preheat the oven to 180 degrees C. Grease and line a loaf pan and set aside.

In a bowl of a stand mixer with the paddle attachment or with a hand mixer, first add the sugar and zest. To release more lemon flavor , rub this mixture with your fingers.


Next add in the flour, baking powder, and salt. Whisk to combine.


Next add in the softened butter 1 tablespoon at a time. Ensure this is combined well and dont forget to scrape down the bowl.


Mix in the vanilla extract and then the eggs one at a time. Then mix in the lemon juice followed by the milk.


Remove the bowl from the mixer and scrape down the bowl.


For the blueberries, rinse them first with water and then toss with 1 tablespoon of flour. Toss the berries into the batter and gently fold them in. Fold just enough to evenly distribute.


Pour the batter into the prepared loaf pan and spread even. Top with a layer of the chilled crumble and blueberries, if required.


Bake for 1 hour or until a toothpick in the center comes out clean with a few moist crumbs. The loaf would appear golden around the edges and puffed up in the center.


Allow the loaf to cool at room temperature.

Now to prepare the icing , whisk together all of the ingredients well. If it is too thick, mix in an extra bit of cream or you can use milk also -+++



+and if its too fluid, mix in another spoonful of sugar.


Lift the loaf out of the pan and drizzle with the icing. Enjoy!
