A super moist chocolate cake with dried cranberries that is super easy to make, delicious and simple. Perfect for those who love the combination of cranberries and chocolate!
INGREDIENTS
Dry ingredients
1 and 1/2 cup plain all-purpose flour / cake flour
1 teaspoon vanilla essence
1 teaspoon baking soda
1/3 cup cocoa powder
1/2 tsp salt
1 cup powdered sugar
Wet ingredients
1/2 cup olive oil
1 tablespoon lemon juice
1 cup cool water
100 grams dried cranberries
INSTRUCTIONS
Preheat oven to 190°C and grease and line a round cake tin. Set aside.
Sift dry ingredients in a mixing bowl and add cranberries.
In another bowl, combine water, oil, lemon juice and vanilla essence. Add to the dry ingredients and gently stir by hand until lump free. Pour into cake tin and bake for 30 minutes or until a skewer inserted in the centre comes out clean.
Cool completely in the tin. Cut into wedges and serve.
