NUTELLA STUFFED CINNAMON SUGAR DOUGHNUTS

Baked fluffy doughnuts holes coated in cinnamon-sugar that perfectly complements the creamy, chocolate hazelnut Nutella filling.



INGREDIENTS


Doughnuts:

2 1/2 teaspoons active dry yeast

2 tablespoons warm water

3 1/2 cups all-purpose flour

1 cup whole milk , at room temperature

1/4 cup unsalted butter, softened

3 egg yolks

2 tablespoons sugar

1 1/2 teaspoons salt

1/4 teaspoon cinnamon


Filling and for Coating :

3/4 cup sugar

1 1/2 teaspoons cinnamon

1/3 cup Nutella spread filled into a piping bag with a star tip


INSTRUCTIONS


Mix all the ingredients into a mixing bowl of either a stand mixer or with a hand mixer fitted with a dough hook. Beat at low speed until a soft dough forms. Increase speed to medium-high and beat for 3 more minutes . The dough will be soft and sticky.


Tip: If dough is too sticky to handle, add up to 1/2 cup more flour, bit by but until soft enough to handle. The dough should be soft and somewhat sticky so do not add too much flour.


Scrape dough down side of bowl into center, then sprinkle lightly with flour to keep a crust from forming. Cover bowl with plastic wrap and a clean kitchen towel.


Let dough rise in a warm room temperature until doubled for about 2 hours.


Tip : I heated the microwave for 30 seconds and placed the dough in it to rise.


Prepare a baking try with parchment paper. Once dough is ready, turn dough out onto a lightly floured surface and roll out with a floured rolling pin. Cut out as many rounds as possible and transfer to a large baking sheet or the tray. Cover doughnuts with a clean kitchen towel and let rise in warm room temperature until slightly puffed , for about 30 minutes.


While the cut doughnuts rise, make the cinnamon sugar. In a mixer, powder the sugar and cinnamon together. Set aside.


Preheat oven to 190 degree C. Place doughnuts on baking tray and bake for 13 minutes or until lightly golden on top.


Right out of the oven, brush all over with 1 tbsp melted butter and roll in a bowl of cinnamon sugar to coat lightly.


To fill the Nutella, fill a piping bag fitted with a small open star tip with Nutella and gently insert the tip into the side of each doughnuts hole and squeeze a little Nutella inside. Enjoy !!
