OATMEAL RAISIN COOKIES

Cookies that are chewy made with oats, brown sugar, and plenty of raisins with warm flavors like cinnamon and nutmeg.


INGREDIENTS


3/4 cup raisins soaked in hot water for about 10 minutes

3/4 cup maida/ all purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

3 cups old-fashioned rolled or quick cooking oats

3/4 cup unsalted butter, room temperature

1 cup brown sugar

1 egg

1 and 1/2 teaspoons vanilla extract

1/2 cup white chocolate chips



INSTRUCTIONS


In a mixing bowl combine flour, baking soda, salt, cinnamon and nutmeg. Next, add the oats then stir until well combined. Set aside


Preheat oven to 180 degrees C. Line two baking trays with parchment paper.


In another mixing bowl, beat butter and sugar with a hand blender or stand mixer until creamy. Add the egg and vanilla extract then beat until combined.


Add the oat mixture to the butter and sugar mixture part by part, beating after each addition until incorporated.


Drain the raisins and squeeze to remove water. Stir this in the cookie batter.


Drop dough onto baking sheets. Gently press cookies down until they are about 1/2-inch thick using wet hands. Decorate with white chocolates and more raisins if required.


Bake cookies for 15 minutes or until the edges are light golden brown and the center is still soft. Cool cookies completely


The cookies will be soft when out of oven and once cooled they will harden.
