ORANGE CAKE

Soft ,tender cake flavoured with freshly squeezed orange juice that is simple and easy to make.


INGREDIENTS


2 and 1/2 cups maida/ all-purpose flour

2 and 1/2 teaspoons baking powder

4 eggs

1 and 1/2 cups powdered sugar

1 cup olive or vegetable oil

1 and 1/4 cups freshly squeezed orange juice

1 teaspoon pure vanilla extract

Orange zest from 3-4 oranges (Optional)

INSTRUCTIONS


Preheat oven to 180°C. Prepare a round cake tin with parchment paper and set aside.

Whisk together flour and baking powder and set this aside as well.


In a mixing bowl and using a hand mixer with whisk attachment, whisk together eggs and sugar on high speed until pale and fluffy. Add oil in parts and slowly with the mixer on low speed.


Add orange juice, optional zest and vanilla extract. Keep whisking slowly until well combined. Next add flour mixture and whisk on low speed just until combined.


Pour batter into prepared pan. Bake for 50-60 minutes or until a toothpick inserted into the center of the cake comes out clean.


Allow cake to cool completely on a wire rack.
