ORANGE WALNUT CAKE

Amazingly super soft and moist Orange Cake flavored with orange juice, orange zest and ground walnut. Perfect with tea or coffee.


INGREDIENTS


1 cup all-purpose flour

½ cup walnuts, ground

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, room temperature

½ cup sugar

1 tablespoon finely grated orange zest

2 eggs

½ cup orange juice, freshly squeezed




INSTRUCTIONS


Preheat oven to 180 degrees C. Prepare an 8-inch cake pan with parchment paper.


In a mixing bowl, combine flour, ground walnuts, baking powder, baking soda and salt and keep aside.


In another bowl, beat butter, sugar and orange zest. Next add the eggs and whisk for few seconds until smooth.


Add half the ground flour mixture, whisk and then orange juice, whisk again and then finish off with remaining flour mixture until combined.


Transfer batter into the prepared pan, spread evenly and bake in the middle rack of the oven for 30 minutes or until a tooth pick inserted in the middle comes clean.
